Glasspar Holds Celebratory Fernet Tasting, Debuts New Menu

Taste delectable pairings of fernet and consciously-crafted bites at Fernet the Games Begin, hosted at Glasspar, one of Orange County’s polished seafood eateries. The exclusive summer event will take place in the private dining room on Wednesday, July 13 from 5:30 p.m. to 7:30 p.m.

The special tasting is a celebration of Fernet-Branca, an aged, unique amaro, dating back to 1845. Guests will enjoy chef Wilson’s handcrafted fernet-based cocktails that will be paired with a spread of tasty appetizers, intended to evoke the spirit’s unique flavor profiles.

Throughout the night, representatives from Fernet-Branca will pass on expert knowledge of the cocktails. Guests will be highly educated about the classic Italian spirit and what pairs well with it.

Try the fresh Mexican Bay scallop aguachile verde ($19), sprinkled with chile lime corn nut powder, while sipping chef Wilson’s creative cocktail Paradise Found ($19), mixed with handmade vodka, Grand Marnier liqueur, cranberry, lime, and orange bitters.

Glasspar also offers a sustainable sea menu. Indulge in ethically-sourced prawn pappardelle ($36), made with baby artichoke barigoule, basil pistou, and cauliflower puree.

Chef Wilson spends some of his free time locally sourcing seafood for the restaurant, including uni from Santa Barbara. Off the coast of Catalina, the classically-trained culinary chef catches swordfish.

Wilson began his culinary career at an early age, working for Dana Point’s legendary Chart House. He attended the renowned Culinary Institute of America in New York and then rose through the ranks at several iconic California-based eateries.
