While a multitude of restaurants and eateries await in the city, dining is made easy (and delicious) with Bellini, The Beatrice’s world-class restaurant by the renowned Ignazio Cipriani. Plating modern Italian cuisine, guests can expect a variety of delectable dishes for breakfast, lunch and dinner. Some of our favorites? Steak tartare with quail egg and black truffle, comforting Umbrian lentil salad dotted with butternut squash in baby kale, tagliatelle flavored by porcini mushrooms and the wild salmon drizzled in a white asparagus puree. In Sonoma, Healdsburg’s historic plaza recently welcomed The Matheson and Roof 106. The trilevel building features two restaurants, each with its own vibrant personality. Inside The Matheson, guests will find a vaulted ceiling constructed with beams stained with natural hues and in red, similar to Bordeaux wine barrels. Sourcing from local growers, ranchers, fishermen and artisans, the culinary team created five- and eight-course tasting menus. The Sushi Kitchen features a la carte sashimi, hand rolls and specialty dishes, and the bar seats up to 12 guests. Roof 106, located on the third floor, offers seasonal dishes from the wood-burning oven, and the wheat flour for the dough is sourced from a biodynamic, organic farm and vineyard owned by Lou Preston, a renowned Dry Creek Valley winemaker, farmer and baker.

Visitors to wine country enjoy both organic small-batch wines and art at The Donum Estate, a 200-acre oasis in Sonoma. Winemaker Dan Fishman dedicates 82 acres to pinot noir and 9 acres to chardonnay, and guests now sip his creations in a new wine tasting pavilion. Mei and Allan Warburg, owners of Donum, add art to the equation. The Donum Collection—50 major works from renowned international artists like Doug Aitken, Wim Delvoye and Anselm Kiefer—has another lure for visitors, as the property’s collection includes paintings and open-air sculptures. The Donum Home, which was recently reconfigured by Danish architect David Thulstrup, now showcases recent acquisitions by Tracey Emin (“Another 30 Years,” 2019) and Jeppe Hein (“Chardonnay Mirror Balloon,” “Rose Mirror Balloon” and “Redwine Mirror Balloon,” 2020).

After an extensive three-year renovation, Keswick Hall reopened near Charlottesville, Va., and the wait was worth it: The 80-suite resort, which dates back to 1912, is stunning. New York Citybased architecture firm Hart Howerton reimagined the sprawling property with both lavish and understated touches—it’s an oasis of calm, a place to breathe again among the rolling foothills of the Shenandoah Mountains. Amenities include a new spa (opening this spring), newly installed European clay tennis courts (the first subirrigated clay courts in the mid-Atlantic) and a heated horizon pool, which features ultraviolet light filtration and cozy cabanas.

Before Keswick reopened, locals buzzed about the property’s stand-alone restaurant and bar, Marigold by Jean-Georges. The chatter wasn’t misguided, as the venue— with its rustic exterior and post-and-beam interior—is a visual knockout. The outdoor space is no less charming, with lush flower and herb gardens, a petanque court for boules (think bocce) and a stone fireplace. The culinary team sources locally and from Oakdale Farm, which is run by the resort and produces vegetables, edible flowers and, starting this spring, its own honey. The kitchen’s standout courses include spice-crusted Faroe Island salmon, roasted Maine lobster and prime tenderloin. Every dish from Vongerichten’s team is a steady balance of beauty, taste and restraint, explaining why it’s already an instant classic.

Another crown jewel at Keswick is its Pete Dye championship golf course, which, according to regulars, is playing exceptionally well in its course maturity. A renovated clubhouse, complemented by a pro shop and members lounge, opened this winter. For oenophiles, the Monticello Wine Trail pays homage to Thomas Jefferson’s wine heritage and now includes more than 30 wineries; book a private tour with Monticello Wine Tour & Coach Co. to visit up to five wineries and tasting rooms in an afternoon or evening.

At the helm is executive chef Brandon Carter. “For me, one of the most interesting things we have is our dry-aged beef program. Right now, we’re aging bone-in strips for about 24 days,” Carter says. “Some of the more creative dishes are the scallops with lamb and collard dolmas or merguez with field pea loubia and preserved lemon.”
